I love the vibrance of a chimichurri, and I love that it meets my weeknight criteria of quick & easy. This brilliant green sauce of fresh herbs is a flavor-enhancer to spoon over or into all sorts of savory dishes. Here are just a few ideas:

The recipe I created here is not quite a traditional chimichurri; hence the name "Chimichurri-ish". Although the origin is difficult to hunt down (I've read many contradictory versions), the consensus seems to be that chimichurri is an Argentinian condiment typically served over grilled meat. (As mentioned, it's wonderful with so many plant-based dishes!) The classic version includes oil & vinegar; neither are found in this recipe. I liked the idea of using fresh lime juice instead of vinegar, balancing it with a touch of maple syrup. I'd rather go for whole foods if I can to replace oil, so I chose avocado for it's richness and color-appropriateness. However, I do often make this without the avocado when I want just a lighter & brighter-flavored fresh sauce for a dish. I did want to keep parsley in the forefront, which is traditional, but love the addition of cilantro here, which adds a nice soft, textured flavor. And fresh oregano is well worth including here - it really tastes amazing fresh, especially compared to dried oregano. If you don't grow your own, just pick up a little pack at the store.
I've found this sauce to be a meal-saver, quickly and easily bringing leftovers together with a fresh twist for another meal. Three cheers for Chimichurri-ish!
