This cranberry orange relish is a bright and refreshing no-cook holiday treat and about the quickest to make! It only requires combining three whole-food ingredients in a food processor. We're using the entire satsuma in this recipe, so you don't even have to zest, juice, or peel!
10medjool datesor up to 12, depending on how sweet you like it
Instructions
Cut the satsumas into quarters and give a quick check to see if there are seeds. A seed or two is fine, but more can make the relish bitter. Add the quartered satsumas to the food processor.
Glance over your cranberries and remove any shriveled or spotty ones. Add them to the food processor.
Remove the pits and stems of the dates and add them to the food processor.
Use the pulse option on your food processor to pulse a few times, then check the consistency. Continue to pulse until all the fruit has been broken down some. Taste and add another date or two if you'd like it sweeter.
Serve with traditional Thanksgiving holiday food, on sandwiches, stirred into yogurt, chia puddings, or oatmeal, over ice cream, on toast, or all by itself. Can be stored in the fridge for up to a few days.
Notes
Pre-wash all the fruit. Since the whole fruits are being used, organic/pesticide-free fruit is ideal.Nutrition calculations are based on using navel oranges, which tend to be bigger than satsumas. It also doesn't factor in using the entire fruit, so calculations are not exact.
