    Golden Banana Oatmeal

    I love that first meal of the day.  I try to enjoy a cozy, calm, comfy breakfast since after that it will surely be a busy day.  One of the most cozy, calm, comfy foods that exists for breakfast is oatmeal.  Snuggling up to a steaming bowl is my kind of morning.  Since we have it often around here, I like to mix it up by playing with flavors.  Turmeric has been a spice "toy" of choice lately (see last week's curry), and as I experimented with turmeric in oatmeal, Thai flavors came to mind:  banana, lime, coconut, ginger.  The combination is so delicious, we've had Golden Banana Oatmeal every morning for several days.  Like dessert for breakfast.  Mmmm.

    The banana serves as a sweetener, so that just a touch of maple syrup on top is all that's really needed for serving.  I've suggested some toppings; feel free to use what you have on-hand or experiment a bit, too.  Don't have a lime on-hand?  Well, that would be a game changer.  I highly recommend not skipping the lime zest.  It's worth it.  The zest is the highlight.  Yes, you can eat this oatmeal without the lime and really enjoy it, but once you've had it with lime zest I don't think you'll go back.  If you're trying to work omega-3s in each day like I am, you will want to make sure you stir the flaxseed meal or chia seeds in at the end, too.

    Yay for coconut chips!  So good on top of this oatmeal.  The coconut chips can be toasted while the oats are cooking, so that you will have your steaming, cozy, tropical-scented bowl and toppings within 15-20 minutes.  This recipe is for 8 servings so that you can enjoy it more than one morning, (unless you're feeding a crew of 8, of course!).

    The Recipe

    YIELD:  8 servings 

    PREP TIME:   5 minutes
    COOK TIME:  15 minutes
    TOTAL TIME:  20 minutes

    RECIPE CATEGORY:  Breakfast

    COOKING METHOD: Simmer, toast

    GOLDEN BANANA OATMEAL RECIPE

    INGREDIENTS

    2 cups steel cut oats (verify they are gluten-free if necessary)

    2 cups unsweetened vanilla plant milk, like almond or coconut

    2 cups filtered water

    3 cups diced banana, about 4 bananas

    2 teaspoons turmeric powder

    2 teaspoons cinnamon

    1 ½ teaspoons ginger powder

    ½ teaspoon cardamom

    ½ teaspoon nutmeg

    ¼ teaspoon pumpkin pie spice

    ⅛ teaspoon salt (optional)

    1 tablespoon lime zest, from one large lime or two small

    1 cup unsweetened coconut chips

    ¼ cup ground flax and/or chia seeds

    1 cup unsalted pistachios

    Additional toppings: diced bananas, mango, squeeze of lime, a drizzle of maple or date syrup or a sprinkle of maple or date sugar

    METHOD

    1. OATMEAL: In a large pot, combine the oats, milk, water, banana, and spices. Bring to a boil, then reduce to simmer for 10 minutes. Stir occasionally to keep the porridge from sticking to the bottom of the pan.

    2. COCONUT CHIPS: While the oatmeal is simmering, heat a small pan over medium heat until hot. Turn off and remove pan from heat, then add the coconut chips while stirring constantly with a fork until toasted golden brown. Be careful not to let the coconut go darker. Once golden, pour the coconut into a small bowl or jar.

    3. STIR INS: Once the oatmeal is cooked, turn off the heat and stir in the salt (if using), lime zest and flax/chia until well combined.

    4. SERVE: Spoon the porridge into a bowl and top with the toasted coconut chips, pistachios, and other desired toppings.

    5. ENJOY.

    Note:  Cooking times are approximate and will depend on various factors, like your personal kitchen speed and how many hands you have working in the kitchen.  Cooking can become a zen experience. Enjoy the ride!   

    *Oil-free indicates there are no oils used in the recipe; however, fats can still exist in ingredients, such as the fat in coconut milk.
