I love that first meal of the day. I try to enjoy a cozy, calm, comfy breakfast since after that it will surely be a busy day. One of the most cozy, calm, comfy foods that exists for breakfast is oatmeal. Snuggling up to a steaming bowl is my kind of morning. Since we have it often around here, I like to mix it up by playing with flavors. Turmeric has been a spice "toy" of choice lately (see last week's curry), and as I experimented with turmeric in oatmeal, Thai flavors came to mind: banana, lime, coconut, ginger. The combination is so delicious, we've had Golden Banana Oatmeal every morning for several days. Like dessert for breakfast. Mmmm.
The banana serves as a sweetener, so that just a touch of maple syrup on top is all that's really needed for serving. I've suggested some toppings; feel free to use what you have on-hand or experiment a bit, too. Don't have a lime on-hand? Well, that would be a game changer. I highly recommend not skipping the lime zest. It's worth it. The zest is the highlight. Yes, you can eat this oatmeal without the lime and really enjoy it, but once you've had it with lime zest I don't think you'll go back. If you're trying to work omega-3s in each day like I am, you will want to make sure you stir the flaxseed meal or chia seeds in at the end, too.
Yay for coconut chips! So good on top of this oatmeal. The coconut chips can be toasted while the oats are cooking, so that you will have your steaming, cozy, tropical-scented bowl and toppings within 15-20 minutes. This recipe is for 8 servings so that you can enjoy it more than one morning, (unless you're feeding a crew of 8, of course!).
