As we gear up for Memorial Day weekend, a time for gathering with and remembering loved ones, consider bringing this delicious salad along. It can put a spring in your step. Haha, I know - but no, really. It's packed with vitamins, minerals, fiber, micronutrients - just the good stuff, with nothing processed to drag you down. And the springy shapes are just plain fun. If you don't have a spiral vegetable slicer, you may be surprised to know that they give a lot of bang for their buck. For under $30, it provides a prep method that can be faster than chopping and may help everyone in your household eat more veggies - and be more open to a wider variety at that. As long as there is some width and sturdiness to your vegetable, you can create springy noodles out of everything from radishes to cabbage. The coils of vegetables are not only beautiful to look at; the thin, precise spiral cuts create texture that is a pleasure to eat.
The radish, carrots, greens, and cashews create a wonderfully colorful salad.
The crank-style spiral vegetable slicers usually come with a few different blades for varying the coil shape. I've used two in the salad pictured.

Dressing Time: 5 minutes
Salad Time, Prep & Serve: 25-30 minutes

Experiment: If money that would normally be spent on processed foods went to the best organic, fresh, real food ingredients available, notice if your body prefers the change. Real food can be quick, easy, and even fun to make, like this recipe.
