When I'm on the go (which is often, lately) and need something yummy to eat and quick, this Chocolate Almond Kale Smoothie does the trick. It's very easy to put together, with ingredients I almost always have on-hand and not really any "extras" or unusual ingredients to dig for. I keep it simple for this reason. It literally only takes a minute or two to gather the ingredients before I'm blending away and then reaching for a smoothie jar so that I can drink it on the run.
I do believe that it's ideal to sit down and eat slowly, focussing on the meal at hand and savoring each bite. I strive to structure my time to eat like that - I just don't always have the luxury to do so. When it's just not in the cards, I'm so thankful for smoothie jars and quick smoothie recipes like this. I can get my greens, fruit, nuts, and seeds all in this one smoothie jar, rather than stop at fast food while I'm out, where I'd likely get 0 of these important nutritious foods. I do focus on sipping slowly, even when I'm in a rush - that's when it's extra important to take it easy and help my system stay calm and prepared for the next thing on my plate (so to speak).
This particular recipe is filling, too, thanks to the nuts and chia seeds. It really is a meal in a glass when you don't have time to eat one. And when my sweet tooth is talking to me, it's totally satisfied by this smoothie. The family also gives the Chocolate Almond Kale Smoothie a big thumbs up, appreciating that it can be taken with them as they head out the door, too.
New in the Shop:
There's something about almond butter with anything banana that is so darn delicious. Have you tried banana ice cream with almond butter? The best. An all-time favorite flavor combination is of course chocolate and peanut butter, but for a lighter, more caramel-like option, almond butter is the way to go.
A packed half cup of kale is a decent amount, and when I have little time, I love that I'm getting some greens in so quickly and easily. So much more nutrition (and really way more delicious) than the old days of drive-thrus! Woot woot!

Recipe Note: Frozen bananas are easy: just fill a baking sheet (or other flat surface that will fit and survive in your freezer) with peeled bananas and freeze for a few hours. Make sure the bananas aren't touching so they don't freeze together. Store extras in freezer-safe containers.
Note: While eating more produce is the top priority, I recommend buying organic ingredients whenever possible to avoid consuming (and supporting) the use of harmful pesticides. Compare the cost of organic to the drive-thru and you may be surprised to find organic made-at-home meals often cost less. Many recipes you'll find here travel well and are about as quick to make as hitting the local fast-food joint.
