If you're looking for a cookbook full of totally doable recipes that can help you put beautiful vegan food on the table in a practical way, Frugal Vegan has got you.  Authors Katie Koteen and Kate Kasbee of Well Vegan have created budget-friendly recipes full of whole foods with minimal oil and sugar and loads of deliciousness.  

These Coconut Peach Popsicles are now my go-to on these hot hot days we've been having.   They're like peach mojitos in popsicle form!  My whole family has been clambering for them.


Frugal Popsicles

The popsicles get their creaminess from coconut yogurt.  I love coconut-based yogurt, but when one little carton costs $1.50 on a good day, buying one for each family member adds up quick, so I don't end up getting it that frequently.  But using the little carton of yogurt as an ingredient and getting several servings out of it? That fits my budget better.  With mint & basil growing in our deck garden, I only need to buy a container of yogurt and a peach to make four fresh, organic, whole-fruit-and-herb popsicles that rival any store-bought.

COCONUT PEACH POPSICLES RECIPE

YIELD:  makes four

PREP TIME:  10 minutes + 3-4 hours to freeze

RECIPE CATEGORY:  Snacks, Dessert
PRIMARY TOOLS:  blender
COOKING METHOD:  blending, freezing

PRINT


INGREDIENTS

1 ripe peach

1 (6-oz [170-g]) container vanilla coconut milk yogurt

¼ cup (60 ml) water

Fresh basil or mint, optional

METHOD

Cut the peach into quarters, discarding the pit. Place all of the ingredients into a blender. Blend until smooth and pour into popsicle molds to freeze. Freeze for 3 to 4 hours before serving.
