    Quick Strawberry Frozen Yogurt (vegan)

    A quick strawberry frozen yogurt recipe that can be made in just 5 minutes and involves no dairy? Absolutely. It's such an easy recipe to make with just four ingredients (and none of them are bananas). No ice cream maker necessary! Eat the whole batch or share, it's totally up to you and nutritious either way. The natural strawberry flavor is the star here, so berry good.

    When you think of spring flavors, what comes to mind? There are so many, really, but one of the first that comes to mind for me is that sweet, sentimental strawberry. Such a sunshiny treat! The beauty of this recipe, though, is that frozen strawberries are used, so really you can enjoy this strawberry sensation anytime you'd like. It's so simple, you'll kick yourself for not making it sooner! An ideal treat for weight-loss, it is a light snack that's just over 100 calories per serving while being really satisfying and flavorful - not to mention beautiful! Plus, it's quick - your soft serve fro yo can totally be ready I just 5 minutes whenever you'd like, thanks to using frozen fruit!

    Ingredients & Variations

    Just four ingredients required for this strawberry fro-yo recipe:

    Strawberries, frozen - this is how we achieve the amazing strawberry flavor in this fro-yo. Real strawberries!

    Strawberries are at the top of the Dirty Dozen produce list, meaning they typically have the most pesticide residue. Toxic pesticides have negative effects on human and planet wellness. Until we successfully ban the use of such pesticides in our food systems, I make sure to buy organic strawberries whenever possible.

    Medjool dates - one or two medjool dates add sweetness while still adding nutrition.

    Vanilla plant-based yogurt, unsweetened - There are really satisfying plant-based yogurts on the market these days. My favorites right now are Forager's (they use vanilla beans so there are vanilla specks in it!) and So Delicious organic yogurts. Unsweetened yogurt allows you to just sweeten your fro-yo with dates and strawberries without the added white cane sugar, which means more nutrition. If you only have access to sweetened yogurt, though, skip the dates or add just a small amount.

    Vanilla - Either powdered or liquid can be used. If you happen to have a vanilla bean or paste, even better! Add a tiny amount for fantastic flavor.

    Let's make this quick strawberry fro yo recipe!

    It's the easiest! Simply add all the ingredients to your blender. It is important that you use a strong blender with a tamper. That allows you to avoid adding liquid to the mix to get it to blend, which would make the fro-yo more like a smoothie. Just push that tamper through the lid of your high-speed blender as you run your blender. If you don't have this kind of blender, you could try a food processor - let me know how that goes (I haven't tried that yet).

    Tip: I like blending the medjool dates without soaking them first so that there are little bursts of sweetness. If you prefer a smoother fro-yo, though, soak the dates in hot water for about 15 minutes before blending the ingredients.

    Serving

    This recipe makes a batch that serves two a nice little treat, though eating the whole batch yourself means that you're just eating some strawberries, dates, and a ½ cup of yogurt yourself. Not bad, right? Sounds like a great breakfast! In fact, that's exactly what's going on in the breakfast bowl below.

    Increase the recipe to serve more, just make sure it fits in your blender! It may be easiest to work in batches. If you do, you can place the finished batches in the fridge or freezer while you work to maintain the fro-yo texture.

    Storing

    If you'd like to make this fro-yo in advance of serving, store in a freezer-safe container in the freezer and allow to thaw before serving just enough to scoop.

    Ingredients

    • 1 ½ cups frozen strawberries organic
    • 1 medjool date or two, pitted
    • ½ cup unsweetened vanilla vegan yogurt such as Foragers or So Delicious unsweetened
    • ⅛ teaspoon vanilla liquid or powder

    Instructions

    • Combine all of the ingredients in a high-speed blender with tamper. Turn it up to high and use the tamper to stir the ingredients until they have all blended well into a creamy mixture.
