    If I see something on a menu that has chipotle in it, I'm probably ordering it.  There's something about that smokey flavor that draws me in.  I've enjoyed a few store-bought chipotle mayos, but am not always a fan of the ingredients I see listed on the label, especially since reducing my oil intake, which is often a base in mayo.  Our household seems to want to make chipotle mayo a staple, so I've been meaning to try making my own for awhile.  When I finally got around to it, I was really considering the ingredients.  I've had chipotle mayo with a cashew base and it was really delicious.  I may eventually post a cashew-based recipe.  But what about making one with more vegetables?  Since I have a tendency to overemphasize cashews in my life, I decided to try a cauliflower base for my first go.

    This mayo has a nice creaminess from the steamed cauliflower, and provides traditional  mayo flavors like shallot, garlic, mustard along with what makes chipotle mayo chipotle mayo:  chipotle pepper, plus lime.  Yum!

    With this chipotle mayo, you can try using it in a variety of ways:

    • spread it on a sandwich, taco, burrito, wrap, or burger

    • use it as a dip for fries, crackers, or veggies

    • fold it into your grain of choice, such as quinoa or rice

    • add it to a BBQ sauce or ketchup

    • use it as a salad dressing, or add it to one

    • stir it into soups

    It's easy and fun to make without too many steps and fun to eat.  The recipe provides a pretty big batch - more than your typical jar of mayo - that should last about a week in your fridge, if it's not gone by then.  I would think it would work to freeze leftovers in an ice cube try - I haven't tried that yet; let me know if you do.  Is it as rich as a cashew-based or oil-based chipotle mayo? OK, not quite, but it's tasty and has managed to add more veggies to (and subtract fatty foods from) the day.  Woohoo!

    VEGAN | WFPB | QUICK | EASY | REFINED SUGAR-FREE | OIL-FREE | NUT-FREE | TOFU-FREE | CONDIMENT

    YIELD:  About 3 cups

    PREP TIME:  10 minutes

    COOK TIME:  20 minutes    

    TOTAL TIME:  30 minutes

     

    PRINT RECIPE

    INGREDIENTS

    3 cups cauliflower florets, cut into relatively equal size (about ½ a large cauliflower head)

    1 cup vegetable broth

    1 dried chipotle pepper, top and seeds removed (leave a couple for heat, but if you don't want heat make sure you remove them all!)

    2 medjool dates, seed and stem removed

    ⅓ cup chopped shallot

    1 tablespoon chopped garlic

    2 tablespoons flaxseed meal

    1 tablespoon dijon mustard

    2 teaspoons white wine vinegar

    1 tablespoon + 1 teaspoon lime juice

    1 teaspoon tamari or soy sauce

    2 teaspoons paprika

    2 teaspoons smoked paprika

    METHOD

    1. STEAM CAULIFLOWER: Place the cauliflower florets in a steamer and steam for 10 minutes, until the florets have softened and are fork tender.

    2. PREPARE CHIPOTLE: Meanwhile, preheat a small deep pan or pot over medium heat. Reduce to medium low and add the pepper, stirring constantly for 2 minutes. The pepper should be fragrant.

    3. SIMMER CHIPOTLE AND DATES: Add enough water to the pan to cover the pepper completely, carefully (it will steam at first). Add the two dates. Bring to a boil, then simmer for 6 minutes. Remove the chipotle and dates with a fork or strain in a colander.

    4. BLEND: Place all ingredients in a blender and blend until smooth. Taste and add a bit of salt and pepper if desired.

    5. MANGIA!
