This two-ingredient frozen drink recipe features a wonderful flavor combination: pineapple and mint! Add your favorite booze to make it a cocktail or keep it a mocktail - either way, it's delicious! This is a quick and easy recipe, with frozen drinks ready within 5 minutes! This recipe is vegan and refined sugar-free.

Pineapple and mint go together like peanut butter and jelly. Mint softens the tart, acidic pineapple so that the delicious flavor comes to the forefront. This drink is so quick and easy to put together and the flavors are such a sunshiny treat, it’s become a summer fave. With just two ingredients + water, it’s barely a recipe - yet, I do consider it one because I feel it’s important to get it right: these two flavors have their own perfect, sweet harmony all on their own. I mean, sometimes I do add rum and a lime wedge for an awesome mojito, or tequila or vodka to switch it up, but for me, those additions actually distract a bit from that perfect harmony. I really prefer to enjoy my Pineapple Mint Frozen Drink as a simple mocktail, just those two light and fresh ingredients cooling us down on a hot day. Below, I’ve given you options so you can decide for yourself.

ingredients and substitutions

Frozen pineapple often comes in 10-ounce bags, which makes this recipe extra easy.

Any mint will do, but of course the ideal mint to use is pineapple mint, if you can! The variegated leaves are so lovely - but if you have a different mint on-hand, by all means use it. It can be fun to experiment with mint varieties to discover your favorite.

For cocktails: You can really add any liquor you like. Rum works well here. Note: Animal products are still sometimes used in the making of commercial alcohol. Check your rum source to make sure it's vegan. One good resource I like to use is barnivore.com.

All that's required for this recipe is a good strong blender. Ok, you'll need something to measure out the ingredients and glassware, too.

If you have a good, strong blender, you’re set to make this drink. Water is included in the recipe to help blend the frozen pineapple. If your blender’s ability is questionable, simply add more water to thin it out until your blender can handle it. It will still be delicious. If you find it’s not sweet enough for you after adding extra water, adding a touch of maple or date syrup will take care of that.

As I mentioned, this drink is fantastic in the summertime! Technically, however, you can make it year-round if your grocer has frozen pineapple and mint sprigs available all year long.

Make popsicles! Pineapple mint is a wonderful combination for this. Simply pour the prepared mocktails into popsicle molds and freeze.

Avoid freezing the cocktail version, since generally alcohol doesn't freeze and different types have different reactions to freezing, some of which can be dangerous.

Ingredients

  • 10 ounces pineapple frozen
  • ½ cup water filtered
  • 1 tablespoon mint fresh, preferably pineapple mint
  • 3 ounces liquor of choice such as rum, optional
  • ½ teaspoon maple syrup or date syrup, optional

Garnish ideas

  • extra mint
  • lime
  • edible flowers

Instructions

  • Place the pineapple, water, and mint (except garnish) into a high-speed or other strong blender and blend on high until you’ve reached the desired consistency, using the tamper as needed.
  • If including alcohol, add it and blend at low speed to combine.
  • Pour into two glasses and garnish with the extra mint.
  • Serve with reusable or compostable straws or spoons.
